Protect heads from birds with netting. Harvest the heads when dry. After seeds have been adequately dried, soak in salt water for a few hours. Pat dry and roast seeds in an oven until the color begins to change. Store in an airtight container and enjoy! Note: Do not store unroasted seeds.
